Chicken Caesar Salad Wrap
This is the funnest wrap ever! I love making these because I can put them in lunches and everyone loves them. Easy to eat, carry around and a fun way to enjoy a delicious salad on the run!
Ingredients
1 head romaine lettuce, chopped
1 small red onion, sliced
1 can of chicken, drained (12.5 oz can)
1/4 cup finely diced dill pickles
1/3 cup grated parmesan cheese
4 large spinach tortillas
For the Dressing:
3 garlic cloves
2-3 anchovies
2 tbsp lemon juice
2 tsp dijon mustard
1 tsp Worcestershire sauce
1 cup prepared mayonnaise
Salt and pepper to taste

To a large bowl add the chopped romaine lettuce, sliced red onion, drained can of chicken, diced dill pickles. and the grated parmesan cheese.

In a small jar, combine the garlic cloves, anchovies, lemon juice, dijon mustard, Worcestershire sauce and prepared mayonnaise. Using an immersion blender, blend everything together until well combined. Salt and pepper to taste.

Dress the salad with as much of the dressing as desired and toss to coat. Reserve the remaining dressing in the refrigerated in an air tight container.

Place the large spinach tortilla on your work surface and put about 1 cup of prepared salad on the tortilla wrap. If you want more chicken caesar salad, simply add more salad. Roll the wrap up like you would a burrito. Serve with your favorite sides and enjoy!
