Chicken and Waffles with Mango Syrup

Chicken and Waffles with Mango Syrup

Chicken and waffles are a wonderful breakfast, brunch, lunch or dinner idea. I like to serve mine with a delicious mango syrup!

Ingredients

For the Fried Chicken: 3 chicken breasts, each cut into thirds
1 cup sour cream with chives
2 cups flour
1/4 cup Montreal chicken seasoning
1 tbsp black pepper
1 tbsp baking powder
3 eggs
1/3 cup milk
Oil for frying
For the Waffles: 2 cups milk
1/3 cup sugar
1/3 cup olive oil
2 1/2 - 3 cups flour
2 tsp salt
1 tbsp baking powder
For the Mango Syrup: 2 cups frozen mango
2 cups water
2 cups sugar

Instructions

To make the fried chicken: Marinade the chicken strips in the sour cream for 1 hour.

In a re-sealable plastic bag, add the flour, Montreal Chicken Seasoning, black pepper and baking powder shaking everything together to combine.

In a medium size bowl, whisk the eggs and milk together to combine.

Preheat oil to about 350 degree’s.

Dredge the marinaded chicken strips in the flour, egg mixture and flour once more. Place the chicken in to the hot oil and fry until the internal temperature reaches 165 degree’s. Remove chicken and let it cool.

To crisp up the chicken, heat the oil to 375 and fry the chicken one more time for about 1 minute to crisp it up. Set the chicken aside while you’re making the waffles and mango syrup.

To make the waffles: Whisk all the waffle ingredients together to combine. If needed, add additional flour or milk to get the consistency of batter you like.

Preheat your waffle iron and follow the manufactures directions for cooking the waffles.

To make the mango syrup: In your blender, add the frozen mango and water pureeing until smooth.

Pour the mango mixture into a sauce pan along with the sugar. Stirring gently, bring to a boil and continuing boiling for a couple of minutes allowing the syrup to thicken slightly. Remove from the heat and set aside until ready to use.
