Chicken and Waffles

Chicken and waffles is by far a favorite of mine from the Southern region of the United States. Crispy fried pieces of chicken with tender waffles and be served with your favorite toppings for brunch, breakfast or dinner. Everyone will love this delicious recipe.

Ingredients

For the Waffles: 4 cups self rising flour
4 eggs
1 cup vegetable oil
1/2 cup sugar
2 tsp salt
3-4 cups buttermilk
For the Chicken: 4-6 chicken thighs, boneless/skinless
4 cups buttermilk
2 cups self rising flour
1/2 cup cornmeal
1/3 cup sugar
2 tbsp salt
1 tbsp ground black pepper
1 tbsp granulated garlic or garlic powder
1 tbsp paprika
1 tbsp onion powder
1 tbsp dried dill
1 tbsp dried oregano
1/2 tsp Chinese five spice
1 tsp ground ginger
Oil for frying

Instructions

To make the waffles, add all of the ingredients together in a large bowl and whisk together. If needed adjust the amount of buttermilk to create a thinner or thicker waffle batter.

Cook the waffles as directed by the manufacturer of your waffle iron.

To make the fired chicken, soak the chicken thighs in the buttermilk for at least 2 hours or over night in the refrigerator in a cover container.

In a large bowl, whisk the self rising flour, cornmeal, sugar, salt, ground black pepper, granulated garlic, paprika, onion powder, dried dill, dried oregano, Chinese five spice and the ground ginger together in a large bowl until combined.

Remove the chicken from the buttermilk, allowing excess buttermilk to drip off of the chicken.

Dredge the boneless chicken thighs in the flour mixture, knocking off excess flour. Place the prepared chicken pieces on a baking sheet and deep fry them for about 15 minutes in 350-370 degree vegetable oil or until the are fully cooked through and registering 165 degree’s internally.

Serve the freshly fried chicken with the waffles and enjoy! Serve with your favorite syrups, jams or toppings and enjoy!
