Chicken and Bok Choy Stir-Fry

This quick and easy Chicken and Bok Choy Stir-Fry is packed with flavors and nutrients, making it perfect for a healthy weeknight meal. Tender chicken strips are stir-fried with crunchy bok choy and a savory sauce, creating a delicious balance of textures and tastes.

Ingredients

1 lb chicken breast, thinly sliced
3 baby bok choy, chopped
2 cloves garlic, minced
1 tbsp fresh ginger, minced
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp vegetable oil
1 tsp cornstarch mixed with 2 tbsp water (optional, for thickening)
1/4 cup chicken broth
1/4 tsp crushed red pepper flakes (optional)
Salt and pepper to taste
Cooked rice for serving
Sesame seeds for garnish (optional)

Instructions

In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, sesame oil, and chicken broth. Set aside.

Heat vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken, season with salt and pepper, and stir-fry for 5–6 minutes, or until golden brown and cooked through. Remove chicken from the skillet and set aside.

In the same skillet, add minced garlic, ginger, and crushed red pepper flakes. Stir-fry for 1 minute until fragrant.

Add chopped bok choy to the skillet and stir-fry for 3–4 minutes until it starts to soften.

Return the cooked chicken to the skillet. Pour the sauce over the chicken and bok choy. Stir to coat everything evenly. If you want a thicker sauce, add the cornstarch mixture and stir until the sauce thickens.

Remove from heat and serve over cooked rice. Garnish with sesame seeds, if desired.
