Banana Splits with fresh Cherry Compote

Cherry Chocolate Banana Splits with Freshly Made Cherry Compote

Fresh and delicious, this cherry compote is simple and so flavorful. Bing cherries cooked in syrup are truly the most amazing topping on these banana splits.

Ingredients

4 cups pitted bing cherries
1 cup sugar
1/8 cup cherry kirsch
1/8 cup water
Pinch salt
2 tbsp corn starch
2 tbsp water
4-6 bananas
Ice cream of choice
Prepared chocolate sauce
Whipped cream
Chopped nuts (optional)

Instructions

1
To make the cherry compote, add the cherries, sugar, cherry kirsch, water and pinch of salt to a heavy bottomed sauce pan.
2
Bring to a simmer while stirring and continue cooking for about 10 minutes.
3
Mix the cornstarch and water together to create a slurry and pour it into the cherry mixture while stirring. Continue cooking the cherries for a couple of minutes, remove from the heat and let it cool.
4
To assemble the banana splits slice 1 banana into a boil and top with a couple of scoops of ice cream. Drizzle with prepared chocolate sauce and the freshly made cherry compote.
5
Top with whipped cream and toppings of your choice.
