Cheesy Polenta with Black Beans and Vegetables

Ingredients

4 cups water
1 1/2 cups dry polenta
1 cup unsalted whole kernel corn, drained
1 medium red onion, diced
1 medium green bell pepper, diced
½ medium yellow bell pepper, diced
1 teaspoon ground black pepper
2 teaspoons ground cumin
1 garlic clove, minced
1 tablespoon olive oil
3 ounces low-fat mozzarella cheese, shredded (*optional*)
1 cup unsalted black beans, rinsed
1/4 cup cilantro, chopped

Instructions

In a medium saucepan, bring the water to a boil. Gradually whisk in the dry polenta and reduce the heat to low.

Stir in the corn, red onion, green and yellow bell peppers, black pepper, cumin, and minced garlic. Cook for 8-10 minutes, stirring occasionally, until the mixture thickens.

Add olive oil, shredded mozzarella cheese (if using), and black beans. Stir for another 3-5 minutes until the cheese melts and everything is well combined.

Remove from heat and transfer the polenta mixture to a serving dish. Garnish with fresh cilantro and serve warm.
