Cheesy Dip
While working in Minneapolis St. Paul for a few days, I had an amazing dip for my french fries. It was a cheesy aioli dip that went perfect with my french fries. Here’s my version of the dip and I would hope you become creative, using whatever cheese you like. Here’s a yummy link to hand cut fries Sriracha Aioli with Hand Cut Fries .
Ingredients
4 tbsp butter
1/3 cup flour
2 cups milk
2 cups shredded cheese, your choice
1 cup mayonnaise
2 tbsp minced garlic
Salt and pepper to taste
Instructions

Heat a large sauté pan on the stove and melt the butter.

Add the flour and mix the butter and flour together.

Using a whisk, carefully whisk the milk into the roux and while stirring, bring the mixture to a boil. Reduce the heat and simmer for a couple of minutes.

Remove from the heat and stir in the shredded cheese (your choice). Stir until the cheese is melted and the sauce is well blended.

Allow the sauce to cool completely.

When ready to assemble the cheesy dip, stir the mayonnaise and minced garlic into the cooled cheese sauce. Salt and pepper to taste.

Serve the dip with your favorite french fries or whatever you like to dip. Enjoy!
