Cheesy Corn Fritters with Pepper Jack Pimento Cheese

Golden, crispy, and packed with flavor, these Cheesy Corn Fritters are the perfect snack, appetizer, or side dish! Made with sweet corn, sharp cheddar, and a touch of spice, these fritters fry up beautifully crisp while staying tender on the inside. They’re easy to make and pair wonderfully with sour cream, avocado, or a bold Pepper Jack Pimento Cheese Spread for an extra kick. Ingredients

For the Corn Fritters: 1 ½ cups fresh or canned corn kernels (drained if using canned)
½ cup all-purpose flour
¼ cup cornmeal (for extra crispiness, optional)
½ teaspoon baking powder
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon smoked paprika (optional, for a smoky flavor)
½ cup shredded Cache Valley Creamery® Sharp Cheddar
1 egg, beaten
¼ cup milk (or buttermilk for extra richness)
2 green onions, chopped
1 tablespoon fresh cilantro or parsley, chopped (optional)
2 tablespoons butter + neutral oil for frying
For the Pepper Jack Pimento Cheese: 2 cups shredded Cache Valley Creamery® Pepper Jack Cheese
½ cup mayonnaise
4 oz mild pimentos, drained and chopped
½ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon cayenne pepper (optional, for a spicy kick)
Salt and pepper to taste

Instructions

Prepare the Batter: In a large mixing bowl, whisk together the flour, cornmeal, baking powder, salt, black pepper, and smoked paprika.

Add Wet Ingredients: Pour in the beaten egg and milk, stirring until a thick batter forms.

Fold in the Corn and Cheese: Gently fold in the corn kernels, shredded cheddar, chopped green onions, and cilantro/parsley until well combined.

Heat the Pan: In a large skillet, heat the butter and a splash of neutral oil over medium heat.

Cook the Fritters: Scoop about 2 tablespoons of batter per fritter into the skillet. Flatten slightly with a spatula and cook for 2-3 minutes per side, until golden brown and crispy.

Drain and Serve: Transfer the fritters to a paper towel-lined plate to absorb excess oil. Serve warm with sour cream, avocado, or the Pepper Jack Pimento Cheese spread!

Make the Pepper Jack Pimento Cheese Spread: In a mixing bowl, combine the shredded Pepper Jack cheese, mayonnaise, chopped pimentos, garlic powder, onion powder, cayenne pepper (if using), and a pinch of salt and pepper.
