Cheesey Broccoli Soup
Just a pinch of this and that turns the cheesey broccoli soup into a winner…well actually its the Worcestershire sauce.
Ingredients
2-3 tbsp olive oil
1 cup chopped carrots
1 cup chopped celery
1 red bell pepper finely chopped
1 bunch green onions, chopped
1 tbsp minced garlic
4 cups chopped broccoli
4 cups half and half
4 cups chicken stock
1/4 cup dijon mustard
2 tbsp Worcestershire sauce
3 cups shredded cheddar cheese
Salt and pepper to taste
Instructions

Heat the olive oil in a large pot and add the carrots, celery, bell pepper, green onions and the minced garlic for a couple of minute until fragrant.

Add the broccoli, half and half along with the chicken stock, dijon mustard and the Worcestershire sauce. Stir to combine.

Simmer for about 5 minutes. Add the shredded cheese, stir to combine and melt the cheese. Season to taste and serve in a large bread bowl.

I like to serve this with a pan seared cheese sandwich. Add about 1 cup of shredded cheese into a non-stick skillet and melt the cheese. When melted add a toasted piece of bread onto the cheese and lift it off, serve on the side.
