Ingredients

For Chalupa Shells: 1 1/2 pounds lean ground beef
2 bacon strips, finely chopped
1/4 cup tomato paste
2 tsp cumin powder
2 tsp onion powder
1 tsp smoked paprika
1 tbsp minced garlic
1 cup water
6-8 corn taco shells
6-8 small flour tortillas
Cooking oil for frying
For Cheese Sauce: 1 small red bell pepper, diced
1 small green bell pepper, diced
1 small yellow onion, diced
1/4 quarter cup vegetable oil
1/4 cup flour
1 1/2 cups milk
2 cups shredded Mexican blend cheese
1/2 cup American cheese
Garnish: 2 cups shredded iceberg lettuce
1 small jicama, peeled and finely julienne cut
1 tomato, diced
3 green onions, chopped
Sour cream

Instructions

Heat 4-5 inches of cooking oil to 350 degrees Fahrenheit.

To make the chalupa shells, place a corn taco shell into the flour tortilla and, using a wooden spoon, press the tortilla into the hot oil, allowing the flour tortilla to wrap up and around the corn tortilla shell. Fry until golden brown, holding the frying tortilla in the oil to prevent it from floating up to the top.

In a fry pan, brown the ground beef and bacon. Add the tomato paste, cumin powder, onion powder, smoked paprika, minced garlic, and water. Mix everything together until combined and simmer for 10-15 minutes.

To make the cheese sauce, heat about 1/4 cup of vegetable oil in a pan and add the diced bell peppers and onion. Sauté for a few minutes until very fragrant. Sprinkle with flour, and mix together.

Pour the milk into the bell pepper mixture while stirring, and simmer until thickened. Add the shredded Mexican blend cheese and American cheese. Stir to melt until fully incorporated.

To assemble, spoon the cooked hamburger mixture into the chalupa shells, and spoon some cheese sauce over the top. Follow with the garnishes and a dollop of sour cream. Enjoy!
