Cashew Salad Dressing
Salad dressing shouldn’t be boring. When making up salad dressing add some nuts for a delicious flavor and a nutritional punch!
Ingredients
1/2 cup cashews
2 tbsp water
1/4 cup olive oil
1/4 fresh lemon juice
1/2 cup shredded parmesan cheese
1 tbsp capers
3 sun dried tomatoes, re-hydrated
1 tbsp capers
6-8 kalamata olive, seeded
2 cloves garlic
1 tbsp dijon mustard
salt and pepper to taste

Soak the cashews in about 2 cups of water over night or for at least 2 hours.

Strain the cashews and reserve about 2 tbsp of the water.

Add all of the ingredients into your blender and blend until smooth.

Salt and pepper to taste and serve with your favorite green salad, enjoy.
