Ingredients

1 1/2 lbs skirt steak
, pork loin or chicken
1/4 cup orange juice

1/4 cup lime juice

3 tbsp olive oil

3 cloves garlic, minced

1 tsp cumin

1 tsp chili powder

1/2 tsp smoked paprika

1/2 tsp oregano

1 tsp salt

1/2 tsp black pepper

1/4 cup chopped cilantro

For the Tacos: 8 small corn tortillas

1/2 cup diced white onion

1/2 cup chopped fresh cilantro

1 avocado, sliced

1/2 cup crumbled queso fresco (optional)

Lime wedges for serving

Fresh Salsa: 2 medium tomatoes, diced

1/4 cup diced red onion

1 jalapeño, finely chopped

2 tbsp lime juice

2 tbsp chopped cilantro

Salt to taste


Instructions

Marinate the Meat: In a large bowl, whisk together the orange juice, lime juice, olive oil, garlic, cumin, chili powder, smoked paprika, oregano, salt, pepper, and chopped cilantro. Place the meat in a shallow dish or resealable bag and pour the marinade over it. Cover and refrigerate for at least 1 hour, or up to 8 hours for maximum flavor.

Prepare the Salsa: While the meat marinates, mix together the diced tomatoes, red onion, jalapeño, lime juice, cilantro, and salt in a bowl. Cover and refrigerate until ready to serve.

Grill the meat: Preheat your grill or a cast-iron skillet over high heat. Remove the meat from the marinade and let excess liquid drip off. Grill for 3-4 minutes per side, or until the meat reaches the correct doneness. Remove from heat and let it rest for 5 minutes before slicing thinly against the grain.

Warm the Tortillas: Heat a dry skillet over medium heat and warm the tortillas for about 30 seconds per side until soft and pliable.
