Caprese Zoodle Salad
Just in time for fall, this salad using fresh zucchini from the garden to create a twist on the classic caprese salad.
Ingredients
2-3 small zucchini
1/4 cup extra virgin olive oil
2 tbsp balsamic vinegar
4 roma tomatoes, chopped
1 cup diced mozzarella cheese
1/2 cup freshly chopped basil
Salt and pepper to taste
Instructions

Using a spiraling machine, spiralize the zucchini. Most grocery stores actually have the zucchini already prepared into noodles. If so, you can buy them already prepared if you choose.

To a large bowl, add the zoodles, extra virgin olive oil and the balsamic vinegar. Toss to coat. Set aside for 15 minutes.

Chop the roma tomatoes into bite-size pieces as well as the mozzarella cheese. Add them to the zoodles along with the freshly chopped basil. Toss everything to combine. If needed, add additional olive oil and balsamic vinegar. Salt and pepper to taste.
