Caprese Sandwich with Fresh Pesto Mayonnaise
Delicious and refreshing, this caprese sandwich is a perfect idea for summertime enjoyment. I make a fresh pesto mayonnaise that really makes this sandwich over the top!
Ingredients
1 baguette
2 cups baby arugula
8-12 slices mozzarella cheese
1 large tomatoes, sliced
Balsamic Glaze
For the Pesto:
2 cups basil leaves
1 cup large black olives, drained
1/2 cup toasted pine nuts
1 tbsp minced garlic
1/2-1 cup extra virgin olive oil
1 cup mayonnaise

Slice the baguette into 4 equal portions.

Place the sliced baguettes cut side up and lightly spray with vegetable oil. Place under the broiler to lightly toast the bread (2-3 minutes).

Remove the bread from under the broiler and drizzle with balsamic glaze. You can easily make balsamic glaze by reducing 1 cup of balsamic vinegar to about 1/3 cup. Watch it closely because you don’t want it to burn!

To make the pesto mayonnaise, to the bowl of your food processor add the basil leaves, black olives, toasted pine nuts minced garlic and 1/2 cup of the olive oil. You will need to adjust the olive oil to get the consistency you want with the pesto. Remove about 1/3 cup of the freshly made pesto and fold into the mayonnaise.

To finish assembling the sandwich, spread the balsamic glazed bread pieces with the fresh pesto mayonnaise and layer with arugula, sliced tomatoes and mozzarella cheese. Salt and pepper to taste. Place the sandwich top on, serve and enjoy!
