Ingredients
For the pizza dough:
500g flour (4 cups, approximately)
350g water (1 1/2 cups approximately)
10g salt (2 tsp approximately)
5 g instant yeast (1 1/2 tsp approximately)
20g olive oil (2 tbsp approximately)
For the Caprese Toppings:
Good olive oil
4-6 cups shredded mozzarella cheese
4-5 medium tomatoes, thinly sliced
1 tbsp dried oregano
1/4 cup balsamic glaze
salt and pepper to taste

First, let's talk about the pizza dough. We'll be using 500g of flour, 350g of water, 10g of salt, 5g of instant yeast, and 20g of olive oil. Once you've combined all of the ingredients in your bread mixer, knead the dough for 10 minutes. After that, let the dough double in size in a lightly sprayed bowl.

Next, divide the dough into two portions and shape them into round balls. Let them double in size on a lightly floured baking sheet. If needed, add a little bit of flour to help shape the dough if it's too sticky.

While the dough is proofing, let's prepare the Caprese toppings. Thinly slice 4-5 medium tomatoes and place them in a bowl. Drizzle them with olive oil, sprinkle with dried oregano, and let them marinate for 30 minutes.

Preheat your oven and pizza stone to 500 degrees. Once the dough has proofed, shape each portion into a 12-inch round. Drizzle each pizza with olive oil and sprinkle 2-3 cups of shredded mozzarella cheese on each pizza. Bake them in the oven until the crust is golden.

After removing the pizzas from the oven, arrange the prepared tomatoes on top of each pizza, sprinkle with salt and pepper, and drizzle with a couple of tablespoons of balsamic glaze. To make the balsamic glaze, simply boil 1/2 cup of balsamic vinegar, reduce it by half, let it cool, and use it as needed.
