Campfire Beans and Sausage
With the weather warming up, dust off your camping cooking skills with this delicious campfire beans and sausage dish.
Ingredients
1/4 cup lard or cooking oil
2 bell peppers, seeds removed and thinly sliced
1 small onion, chopped
6 garlic cloves, whole
2 cans great northern beans (15.5 oz cans)
6 large sausages (bratwursts)
Instructions

Heat a large sauté pan on the coals of a campfire (or stove).

Add the lard or cooking oil and heat. Add the sliced bell peppers, chopped onion and the garlic cloves (remove the paper skin from the garlics). Sauté the mixture for about 5 minutes or until tender and very fragrant.

Add the two cans of great norther beans (liquid too), bring to a boil and reduce heat to a simmer. To do this on campfire simply move the pan to a cooler part of the fire or remove coals from underneath the pan reducing the heat.

Heat a second pan on the stove or fire and brown the sausages (bratwursts).

Place the browned sausages into the beans, loosely cover and let the beans simmer for 10 minutes to cook the sausages fully.

Serve with a delicious biscuit and enjoy!
