Buttermilk German Chocolate Cake
I love German chocolate cake! I could literally eat this frosting with spoon and be perfectly happy. You can use any kind of cake pan to make this cake, simply adjust cooking times to accommodate.
Ingredients
For the Cake:
1 3/4 cups flour
1 3/4 cups sugar
3/4 cups cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 tsp expresso powder
1/2 cup vegetable oil
2 large eggs
3/4 cups sour cream
1/2 cup buttermilk
1 tbsp vanilla
1/2 cup coffee
For The Pecan Frosting:
1 stick butter (8 tbsp butter), 1/2 cup
1 cup packed brown sugar
3 egg yolks
1 can evaporated milk, 12 ounces
2 tsp vanilla
2 cups sweetened shredded coconut
1 cup chopped pecans
Instructions
1
Preheat your oven to 350 degree’s.
2
Spray a 9x13 cake pan with vegetable spray and dust with flour, set aside. If desired, you can use any cake pan you wish, just be sure to spray with vegetable spray and dust with flour the pans you choose to use.
3
To make the cake: Combine all of the dry ingredients into your mixing bowl (flour, sugar, cocoa powder, baking soda, baking powder, salt, espresso powder). Mix all of the dry ingredients together to combine.
4
In a separate bowl combine all of the wet ingredients (vegetable oil, eggs, sour cream, buttermilk, vanilla and coffee) together and mix together.
5
Add the wet ingredients to the dry ingredients and mix everything together to combine. Scrape down the sides of your mixing bowl and mix on low for about 3-4 minutes or until well combined.
6
Transfer the cake batter into your prepared pans. rule of thumb is to fill the cake pans up 3/4 of the way full.
7
Bake the cake for 30 minutes in the oven and do a toothpick test to make sure it is fully cooked through. If not, adjust cooking times to accommodate.
8
Remove the baked cakes from the oven and let them fully cool in the cake pans before frosting.
9
To make the frosting: To a large sauce pan, add the butter, brown sugar, egg yolks, evaporated milk, vanilla, sweetened shredded coconut and chopped pecans. While stirring, bring to a boil and cook for about 5 minutes to thicken up the frosting. Be sure to gently stir the frosting while it is cooking.
10
Remove the frosting from the stove, let it cool completely before frosting.
11
Once your cake is frosted, ENJOY!
