Ingredients

For the Chicken: 8 chicken drumsticks
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika
For the Chili Butter Sauce: 1/2 cup unsalted butter
2 tablespoons hot sauce (adjust to taste)
1 tablespoon honey
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (optional for extra heat)
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley (for garnish)

Instructions

Prepare the Drumsticks: Preheat your grill to medium-high heat. To butterfly the drumsticks, place each drumstick on a cutting board and carefully slice down the length of the bone to open up the meat, allowing it to lay flat. In a large bowl, toss the butterflied drumsticks with olive oil, salt, black pepper, garlic powder, and paprika until evenly coated.

Grill the Chicken: Place the drumsticks on the preheated grill, skin side down. Grill for about 10-12 minutes per side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (74°C).

Make the Chili Butter Sauce: While the chicken is grilling, melt the butter in a small saucepan over medium heat. Stir in the hot sauce, honey, smoked paprika, cayenne pepper (if using), and lemon juice. Mix until well combined and heated through.

Coat the Chicken: Once the drumsticks are cooked, remove them from the grill and brush generously with the chili butter sauce.
