Brownie Filled Chocolate Chip Cookies

Brownie Filled Chocolate Chip Cookies

Oh my goodness, these cookies are the BOMB! I love my chocolate chip cookies, but fill them with brownies and I’m in heaven!

Ingredients

1 pound butter, room temperature
2 cups brown sugar
1 ½ cups sugar
3 eggs
1 tsp salt
1 tbsp baking soda
2 tbsp vanilla
1 package semi sweet chocolate chips (about 3 cups)
6 cups flour
1 box brownies
2 eggs
1/3 cup vegetable oil

Instructions

Preheat oven to 350 degree’s.

Cream the butter and sugars together until light and fluffy. Add the eggs, salt, baking soda and vanilla. blend everything together until well combined. Scrape down the bowl as needed.

Add the chocolate chips and flour. Mix until everything is well combined. Set cookie dough aside.

In a large bowl, add the brownie mix, 2 eggs and vegetable oil. Mix until everything is well combined.

Scoop out about 2 tbsps of the cookie dough and roll it into a ball. Flatten the cookie dough and spoon a small about of the brownie mixture into the center of the flattened dough. Carefully bring the edges of the dough up and around the brownie mix.

Place the cookie seam side down on your parchment lined baking sheet.

Bake the cookies for about 10 -12 minutes or until they are slightly golden brown, remove from the oven and let them cool on the baking sheet.

Remove from the baking sheet, let them cool completely, serve and enjoy!
