
Broiled Salmon and Veggies
Quick and easy, this broiled salmon and veggies is a great idea for dinner.

Ingredients
4 salmon fillets, 8-10 oz each
1/4 cup soy sauce
1 tbsp whole grain mustard
1 tsp pepper
1 potato
4 carrots
2 celery sticks
1 tbsp freshly minced ginger
salt and pepper to taste

Line a baking sheet with aluminum foil and place a cooling rack inside of a baking sheet. Spray with vegetable spray and set aside.

Mix the soy sauce, whole grain mustard and pepper together in a small bowl. Evenly brush the mixture onto the salmon fillets and set them aside.

Chop up the potatoes, carrots, celery sticks and ginger together however you choose. Sprinkle the vegetables with salt, pepper and lightly spray with vegetable spray, toss to coat.

To cook the vegetables, you can arrange them around the salmon and broil or sauté them until tender.

Place the salmon under the broiler and broil for about 5 minutes or until cooked through. Serve with the vegetables and enjoy!
