Broccoli, Bacon and Almond Salad

Broccoli, Bacon and Almond Salad

Delicious and easy to make, this broccoli, bacon and almond salad is a great idea for dinner. I like to serve cheese bread on the side for a great dinner!

Ingredients

1 pound broccoli florets
6-8 bacon strips cooked and chopped
1 cup chopped toasted almonds
1/2 cup mayonnaise
1 1/2 tbsp rice vinegar
2 tbsp bacon grease
2 tbsp sugar
1/2 cup diced red onion
Salt and pepper to taste
Cheese Bread: 1 pkg Rhodes Warm and Serve Artisan French Rolls
1/2 cup mayonnaise
1 cup shredded sharp cheddar cheese
1/3 cup finely diced red onion
Salt and pepper to taste

Instructions

For the broccoli salad: Add the broccoli florets into a large bowl and set aside.

Cook the bacon until crispy, remove from the panned chop into bitesize pieces.

In another bowl mix the chopped toasted almond, mayonnaise, rice vinegar, bacon grease, sugar, red onion, salt and pepper to taste until all is combined.

Pour the mayonnaise mixture over the broccoli florets and fold everything together until well combined. Cover and refrigerate until ready to serve.

To make the cheese bread, thaw the warm and serve Rhodes Warm and Serve Artisan French Rolls and slice in half.

In a bowl mix the mayonnaise shredded cheddar cheese, diced red onion, salt and pepper until well combined.

Spread the cheese mixture on the roll halves and place them under the broiler until the mayonnaise and cheese mixture starts bubbling.

Serve the broccoli salad with the freshly made cheese bread.
