Breakfast Sandwich with Homemade Spicy Mayonnaise
To be honest, I love this sandwich anytime of the day. The freshly made mayonnaise is the best dipping for this sandwich too.
Ingredients
For the Mayonnaise:
1 egg
1 cup vegetable oil
2 tbsp mustard
1 tbsp white vinegar
1 tbsp garlic chili sauce
1/2 tsp salt
For the Breakfast Sandwich:
8 slices bread
8 eggs
4 slices ham
8 slices American cheese
Vegetable spray
Instructions

To make the mayonnaise, add all of the ingredients in your blender or into a small bowl (be sure the bowl is more like a “beaker”, I just use my 2 cups glass liquid measurer).

If using your blender, blend for 20 seconds or until the mayonnaise emulsion is created. If using your stick blender, blend the mixture in the bowl until emulsion is created. Taste for salt and pepper (if desired) and adjust as needed. Set aside until ready to use.

To make the breakfast sandwich, scramble the eggs and pan sear the ham, set aside.

When ready to assemble the sandwich, dived the scramble eggs, ham and cheese slices between four slices of bread, top each sandwich with the other slices of bread.

Lightly spray each side of the sandwich with vegetable spray and pan sear until both sides are golden brown. If you choose, you can certainly use butter instead of vegetable spray.

When the sandwiches are toasted on both sides, cut half or in “sticks” and serve with the homemade spicy mayonnaise and enjoy! Cover and refrigerate left over mayonnaise and use within a week.
