Ingredients

12 uncooked lasagna noodles
2 eggs, lightly beaten
2 cup ricotta cheese
4 cups shredded part-skim mozzarella cheese
1/2 cup grated Parmesan cheese
1 cup crumbled blue cheese
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/4 teaspoon ground nutmeg
1 can (24 ounce) pasta sauce
Salt and Pepper to taste
Vegetable Spray

Instructions

Preheat the oven to 350 degrees Fahrenheit.

Cook lasagna noodles according to package directions. Drain and place in cold water until ready to assemble the roll-ups.

In a large bowl, combine the beaten eggs, ricotta cheese, 2 cups of shredded mozzarella cheese, grated Parmesan cheese, crumbled blue cheese, chopped spinach, nutmeg, salt, and pepper. Mix well.

Spread about 1/3 cup of the cheese mixture evenly over each lasagna noodle. Roll up each noodle.

Spray a 9x13 inch baking dish with vegetable spray. Pour 1 cup of the pasta sauce into the dish.

Place the lasagna roll-ups seam side down over the sauce. Top with the remaining pasta sauce.

Cover the dish with foil and bake for about 20 minutes.

Remove from the oven and sprinkle the remaining shredded mozzarella cheese on top.

Bake uncovered for an additional 10-15 minutes, or until the cheese is melted and slightly golden brown.

Let the dish cool for 10 minutes before serving.

Serve with a side of chopped salad with balsamic vinaigrette and a roll. Enjoy!
