BLT Taco
Who doesn’t love taco or BLT’s? This recipe combines them together creating a delicious celebration of two international favorites.
Ingredients
1/2 pound bacon, cooked
1 can chipotle peppers in adobo sauce, 7 oz can
1/2 cup water
1 cup mayonnaise or salad dressing
4 tomatoes, sliced
4-6 leaves lettuce
1 ripe avocado
Corn tortillas
Instructions

Cook the bacon until crispy. Remove from the pan and let it rest on a plate lined with paper towels to absorb excess grease.

In your blender, add the chipotle peppers in adobo sauce and the water. Puree everything together.

Fold about 2 tbsp of the pureed pepper mixture into the mayonnaise or to taste.

Heat a large fry pan on the stove and heat the corn tortillas on both sides until they are toasted. If you would like, fry the tortilla to create a BLT tostada.

To assemble, the taco, spread some of the mayonnaise chipotle pepper mixture on the tortilla followed by lettuce, tomato, avocado and bacon. Serve and enjoy!
