BLT Breakfast Bake

BLT Breakfast Bake with Oakdell Eggs

Here’s a delicious idea for breakfast. Bacon, cheese and eggs come together to create a delicious BLT breakfast bake!

Ingredients

8-12 slices of bread
1/2 cup mayonnaise (approximately)
6-12 slices of American Cheese
2 cups cooked bacon, chopped
2 tbsp butter
2 tbsp flour
2 cups milk
2 cups shredded mozzarella cheese
2-3 tomatoes, finely chopped
1/2 cup chopped green onion
6-8 eggs, cooked sunny side up
4 cups shredded lettuce

Instructions

Preheat your oven to 350 degree’s.

Spray a 9x13 baking dish and set aside.

Spread enough mayonnaise over the slices of bread to to lightly cover them. slice the bread pieces and lay them on the bottom of the 9x13 baking dish, mayonnaise side up.

Lay 6-12 slices of American cheese over the bread slices. The bread should be covered and depending on the size of your baking dish will determine how many slices of cheese are needed.

Sprinkle the cooked/chopped pieces of bacon over the cheese and set the dish aside.

In a large sauté pan, add the butter and melt. Once the butter is melted, add the flour and stir to combine the flour and butter together.

Gradually pour in the milk while stirring, salt and pepper to taste and bring to a boil. while stirring, simmer for 5 minutes. Remove from the heat and pour over the bread/cheese/bacon mixture in the baking dish.

Sprinkle the top of the white sauce with 1 cup mozzarella cheese, chopped tomatoes and the green onions.

Arrange and place the sunny side up cooked Oakdell eggs on top of the BLT breakfast bake (arrange as desired) and sprinkle with the remaining shredded mozzarella cheese.

Bake the breakfast bake in pre-heated oven for 10-15 minutes or until the cheese has melted.

Dived the shredded lettuce between your plates and served the baked BLT breakfast bake on top and enjoy!
