Black Bean Salad/Salsa
Here’s a delicious heart healthy recipe salad/salsa that works for any party, appetizer and summer dinner. This recipe courtesy The American Heart Association.
Ingredients
1 15.5oz canned, no salt added black beans, drained
3/4 cup frozen corn, thawed
1 medium bell pepper, diced
1 medium tomato, diced
1/2 cup diced red onion
1 tsp minced garlic
2 tbsp chopped cilantro
2 tbsp cider vinegar
3 tbsp extra virgin olive oil
1 lime, juiced
Instructions

Combine everything in a large bowl, toss to combine. Refrigerate for a couple of hours before serving.

Serve as a salad or salsa with oven baked chips and enjoy!
