Black Bean Minestrone Soup
Minestrone soup is simple to make and always delicious. I like to use can products to make mine because it’s so simple. Serve with cheesy breadsticks and you have a winner!
Ingredients
1 can diced tomatoes (28 oz can)
2 cans black beans (15.25 oz cans)
1 can cut green beans (14.5 oz can)
2 cups elbow macaroni
3 cups vegetable or chicken stock
1 can Italian style tomato paste (6 oz can)
1 loaf Tuscan bread (soft artisan bread loaf)
2 cups shredded mozzarella cheese
Instructions

In a large pot, combine the diced tomatoes, black beans (liquid too), cut green beans (liquid too), elbow macaroni, vegetable or chicken stock and the tomato paste.

While gently stirring, bring to a boil, reduce heat to a simmer and simmer for 10 minutes or until the pasta is fully cooked.

While the soup is simmering, slice the bread into slices and place on a baking sheet.

Sprinkle the bread with the shredded mozzarella cheese and place under the broiler until the cheese is bubbling.

Remove the cheese bread from the oven, slice into bread sticks.

Serve the black bean minestrone soup with the cheesy bread sticks and enjoy!
