Black Bean, Corn and Avocado Salad with Lime Vinaigrette
Refreshing and easy to make, this black bean salad is perfect for summer. I like pairing it with a grilled chicken breast and freshly made corn tortilla chips.
Ingredients
2 cans black beans, drained and rinsed
2 can whole kernel corn
2 avocados, diced
2 bell peppers, diced
1 bunch green onions, chopped
1 bunch cilantro, chopped
1/4 cup fresh lime juice
1/3 cup olive oil
2 tbsp sugar
Salt and pepper to taste
Fresh tortilla chips
Instructions

Drain and rinse the beans and corn, once drained, add to a large bowl.

To the bowl, add the diced avocados, bell peppers, green onions and cilantro gently mixing everything together being careful not to mash the avocados.

In a separate bowl, add the fresh lime juice, olive oil, sugar, salt and pepper (to taste) and whisk together to combine.

Pour the lime dressing over the bean salad and gently toss to combine.

Serve with grilled chicken and fresh tortilla chips and enjoy!
