Beef Taquitos
If you are looking for something different than tacos, here’s a great idea. Normally these are deep fried, however, I like them baked in the oven.
Ingredients
1 pound ground beef hamburger
1 small onion, minced
1 tbsp minced garlic
1 tbsp Mexican seasoning (I use Tajin Classico)
Corn tortillas
Salsa
Vegetable oil
Instructions

Preheat your oven to 400 degrees.

Heat a large sauté pan on the stove and add a little vegetable oil. Brown the hamburger with the onion, minced garlic. Cook until hamburger is fully cooked.

When ready to shape, char the corn tortillas over an open flame. Make sure the tortillas are warm, otherwise the corn tortillas with fall apart when you try and roll them up.

Spoon about 2 tbsps of the cooked hamburger onto the corn tortilla and roll it up like a cigar.

Place the newly formed taquitos seam side down on a baking sheet, spray with vegetable spray and bake in your preheated oven until the taquitos are crisp (about 10-15 minutes).

Remove from the oven and serve with your favorite salsa or dipping sauce. Enjoy!
