Beef Stew
A delicious beef stew is the perfect cold weather dinner. This stew takes a couple of hours to make but it’s mostly in the oven filling your home with the aromas of the season!
Ingredients
2 pounds chuck roast, cut into 1 inch cubes
1/3 cup flour
2 tsp smoked paprika
1 tbsp salt
1 tbsp black pepper
4 medium onions chopped
1 can tomato paste, 6 oz can
1/2 cup red wine (can use cooking red wine)
8 cups beef stock
3 frozen vegetable soup blend packets, 12 oz each)

Instructions

In a large bowl, toss the chuck roast pieces, flour, smoked paprika, salt and pepper together until the meat is fully cooked.

Heat a large oven safe pot on the stove and add enough oil to lightly coat the bottom of the pot. Brown the prepared meat and then remove it to a large plate, set aside.

Add additional oil to the pot if needed and add the chopped onions and tomato paste. Caramelize the onions then deglaze the pan with the red wine. Add the beef stock to the pot and the browned meat.

Place the pot in a pre-heated 350 degree oven for about hour and let the stock reduce down by half.

Add the frozen vegetable packets and any other vegetables you choose, cover and place back in the oven for about 30 minutes.
