Beef or Chicken Wraps

Beef/Chicken Wraps

Making tortillas is easy and fun to do. When you need a quick snack, make some tortillas and wrap them with your favorite fillings. If you are not a chicken/beef fan, fill them with your favorite fillings, fold them up and enjoy!

Ingredients

Tortillas: 3 cups flour
1 cup lard
2 tsp salt
1 cup water (more or less)
Wraps: 2 chicken breasts, cooked and shredded
1 small steak cooked and thinly sliced
2 tomatoes, thinly sliced
4-6 lettuce leaves
Condiments of choice

Instructions

To make the tortillas, in the bowl of your food processor (with the blade) add the flour, lard and salt; pulse together until the fat is cut into the flour and it resembles coarse meal.

Switch the blade for the dough blade and add enough water while the machine is running until a soft dough is formed and knead for about 20 seconds.

Remove the dough and let it rest for about 10 minutes. Divide the dough into 10 golf-ball sized pieces, roll out into a thin circle and cook on a hot griddle for about 1 minute on each side. Remove and continue cooking until finished. Set aside.

When ready to assemble the wraps, add either chicken, beef or both to the center of the tortilla. Finish off with tomatoes, lettuce and condiments of your choice. Roll up like a burrito, serve and enjoy!
