Beef and Cheese Tortilla Towers

Ingredients

1 pound lean ground beef (95% lean)
16 oz chunky salsa
¾ cup black beans, rinsed and drained
½ teaspoon ground cumin
1 cup shredded reduced-fat Mexican cheese blend
7 small whole wheat tortillas
Chopped fresh cilantro (optional)
Cantaloupe-Mango Salsa: 1 cup coarsely chopped mango
1 cup coarsely chopped cantaloupe
⅛ to ¼ teaspoon crushed red pepper

Instructions

Cook Beef: In a large nonstick skillet, brown ground beef over medium heat for 8-10 minutes. Drain, then stir in salsa, beans, and cumin. Simmer for 3-5 minutes until heated.

Assemble Towers: Preheat oven to 350°F. Spray a baking sheet with nonstick spray. Layer tortillas with beef mixture and cheese, repeating twice. Top with remaining cheese and bake for 12-15 minutes.

Prepare Salsa: Mix mango, cantaloupe, and crushed red pepper in a small bowl.

Serve: Cut towers into wedges, garnish with cilantro, and serve with salsa.
