Mouthwatering Bean Burritos with Boiled Plantains

Ingredients
4-6 large flour tortillas
1 can of refried beans
2 ripe plantain bananas
1 lb carne asada, grilled
1 cup shredded cheese (cheddar or Mexican blend)
2 cups fresh pico de gallo
2 cups fresh guacamole
1 cup Mexicana crema
Prepared rice
Salt and pepper to taste
Instructions

Cut the ends and tips off of the plantains and than cut them into thirds. Boil for about 20 minutes or until fork tender, remove, let cool, peel and slice. Set aside until ready to use.

Warm the refried beans in a saucepan over medium heat until heated through. Stir occasionally to prevent sticking.

Preheat a skillet over medium heat.

Take a flour tortilla and spread a spoonful of refried beans onto the center.

Add a few pieces of boiled plantain slices on top of the re-fried beans.

Sprinkle shredded cheese, pico de gallo evenly over the plantain slices.

Season with salt and pepper to taste.

Fold the sides of the tortilla inward and then roll it up tightly to form a burrito.

Place the burrito seam-side down on the preheated skillet. Cook for a few minutes on each side until the tortilla is lightly toasted and the cheese has melted.
