Bean and Cheese Burritos
Here’s a delicious idea for dinner, bean and cheese burritos. Easy to make, fun to eat and everyone will love them.
Ingredients
4 cups refried beans
4 cups Spanish rice
3 cups fresh salsa
2 ripe avocados
2 cups shredded cheddar cheese
6 large flour tortillas
3 cups shredded lettuce
1 cup sour cream

Heat the re-fried beans and set aside.

To make the Spanish rice, simply make white rice as normal but add two tablespoons of tomato paste and 1/3 cup of diced onions into the rice and cook as normal.

Remove the avocado and seed from the skin and mash it in a large bowl. Add 1/2 cup prepared salsa to the mashed avocado and mix together. Set aside until ready to use.

To assemble, spoon some refried beans, Spanish rice, about 1/2 cups shredded cheese into your flour tortilla. Roll up by folding the edges in and rolling the tortilla up into a burrito.

Serve with fresh salsa, guacamole, sour cream and shredded lettuce. Enjoy!
