BBQ Chicken Pizza
Looking for an incredible pizza recipe? Here’s a delicious, fun and easy-to-make pizza. Use some leftover chicken from dinner to re-purpose and create a whole new meal.
Ingredients
For the Dough:
1 1/2 cups water
1/3 cup olive oil
4 cups flour
2 tsp salt
1 tbsp sugar
2 tsp instant yeast
For the BBQ Sauce:
1 cup sugar
1 stick butter
½ cup corn syrup
½ cup water
1 cup diced onion
4 garlic cloves, minced
2 cups prepared bbq sauce
For the Toppings:
4 cups cooked and shredded chicken
1 onion, sliced
Shredded cheese, your choice

To make the dough, add the water, olive oil, flour, salt, sugar and instant yeast into the bowl of your mixer. Mix/knead for 10 minutes. Spray the dough with vegetable spray and cover. Allow to double in size (couple of hours).

Divide the dough into 2 portions and roll each portion into a round pizza (about 16-18 inches round).

To make the BBQ sauce, In a large sauce pan combine sugar, butter, corn syrup, and water. Bring to a boil and continue boiling until the mixture reach soft ball stage.

Add remaining ingredients (diced onions, garlic, bbq sauce) and allow to simmer for about 5 minutes.

To assemble the pizza, preheat your oven to 500 degrees (let the oven preheat for 30 minutes). I preheat my baking stone with the oven. On a floured work surface, roll half of the pizza dough into a pizza round about 16-18 inches.

Transfer the rolled out pizza dough to a flour pizza peel (this makes it easier to transfer to the oven).

Spread about 1 cup of the prepared bbq sauce all over the prepared pizza dough. Spinkle with about 2 cups of shredded cheese and top with about 2 cups of cooked and shredded chicken and half of the sliced onion. Sprinkle with more shredded cheese (about 2 cups).

Transfer the prepared bbq chicken pizza to your preheated oven and bake for approximately 10 minutes or until the crust is golden and the cheese is bubbling.

Remove from the oven, slice and serve!
