Banana Walnut Muffins

Banana Walnut Muffin

I grew up enjoying muffins of all kinds. Muffins and cupcakes are different due to the crumb complexities they both enjoy. Muffins are dense, and will come in a variety of flavors general with bran or some kind of a fiber base. Cupcakes are exactly what they say, a cake that’s cooked in a muffin tin.

Ingredients

1 3/4 cup flour
1/3 cup sugar
2 tsp baking powder
pinch of salt
1 beaten egg
3/4 cup milk
1/4 cup vegetable oil
1 cup mashed, ripe banana
1 cup chopped walnuts

Instructions

In a large mixing bowl, whisk the flour, sugar, baking powder and salt together until well combined.

In a separate bowl whisk together the egg, milk, vegetable oil, mashed bananas and walnuts.

Create a well in the center of the flour mixture and add the milk mixture to the flour. Using a wooden spoon, combine the batter together just until combined.

Spoon into 12 prepared muffin tins (either line them with muffin papers or spray the muffin tin with vegetable spray.

Bake the muffins in a preheated 350 degree oven for about 20 minutes or until the muffins are fully cooked.
