Banana Cream Pie
Here’s a great twist on the banana cream pie classic.
Ingredients
1 package puff pastry sheets, thawed
2 cups banana pudding, chilled
2 bananas sliced
2 cups cream, whipped

Preheat your oven to 350 degrees.

Remove the puff pastry sheets from package and cut each sheet into 9 squares.

Place the puff pastry squares on a parchment lined baking sheet and bake in the oven for about 10 minutes or until golden brown.

While the puff pastry shells are cooking, make your banana cream pudding mix. If you are making instant pudding you won’t need to chill the pudding before using. If using a cook and serve pudding be sure to cool the pudding before using it, otherwise, it will melt the whipped cream.

To whip the cream, pour 2 cups of whipping cream into a large bowl and whisk the cream until it reaches stiff peaks. Sweeten as desired.

To assemble the mini banana cream pies, slice the puff pastry in two and spoon some of the cooled banana cream pudding onto the puff pastry, followed by a few banana slices and a spoonful of whipped cream.

Top with the other puff pastry half, serve and enjoy!
