Bamboo Shoot Asian Salad

Bamboo Shoot Asian Salad

Refreshing and easy to make, this bamboo shoot asian salad is a must for any summer dinner. A splash of fish sauce makes the lime dressing really pop!

Ingredients

For The Salad: 1 cup bamboo shoots, drained
1 small red onion, thinly sliced
4 cups shredded napa cabbage
2 carrots, julienne sliced
1 small cucumber, peeled, deseeded, julienne sliced
2 tbsp toasted sesame seeds
For the Dressing: Zest and juice from one lime
1 tbsp toasted sesame seed oil
1 tbsp fish sauce
1 tbsp soy sauce
1 tbsp rice vinegar
1/4 cup olive oil
Salt and pepper to taste

Instructions

Add the bamboo shoots, sliced red onion, shredded napa cabbage, julienned carrots, julienned sliced cucumber and sesame sees to a large bowl. Gently toss to combine everything together.

In a separate bowl, whisk the lime zest, toasted sesame seed oil, fish sauce, soy sauce, rice vinegar and olive oil together until combined. Taste and season with salt and pepper as needed.

Pour the prepared dressing over the salad and toss to coat. Serve and enjoy!
