Balsamic Peach Chicken Salad

Enjoy the perfect balance of sweet and savory with this Balsamic Peach Chicken Salad. Grilled chicken pairs beautifully with juicy peaches, crunchy candied pecans, and tangy blue cheese, all drizzled with a rich balsamic vinaigrette. This salad is a refreshing and satisfying meal, ideal for a summer lunch or light dinner.

Ingredients

2 boneless, skinless chicken breasts
4 cups mixed greens (arugula, spinach, and/or romaine)
2 fresh peaches, sliced
1/4 cup candied pecans
1/4 cup crumbled blue cheese
1/4 red onion, thinly sliced
For the Balsamic Vinaigrette: 1 tbsp balsamic vinegar
3 tbsp extra-virgin olive oil
1 tsp Dijon mustard
1 tsp honey
Salt and pepper, to taste

Instructions

Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Season the chicken breasts with salt and pepper, and drizzle with olive oil. Grill the chicken for 6-7 minutes per side, or until fully cooked (internal temperature of 165°F). Remove from the grill and let rest for 5 minutes before slicing thinly.

Prepare the Vinaigrette: In a small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, and honey until well combined. Season with salt and pepper to taste. In a large salad bowl, combine the mixed greens, sliced peaches, candied pecans, crumbled blue cheese, and red onion. Add the sliced grilled chicken on top.

Dress the Salad: Drizzle the balsamic vinaigrette over the salad, and toss gently to combine. Serve immediately and enjoy!
