Bacon Baked Potato Soup
A delicious bacon baked potato soup is a great idea for dinner! This recipe will make you smile.
Ingredients
1 pkg bacon (12 ounce) cut into small pieces
2 cups chopped onions
4-6 garlic cloves
1 cup chopped celery
1 cup chopped carrots
1/3 cup flour
6 baked potatoes, chopped into bite size pieces
1 can canned milk (12 ounce)
8 cups milk
2 cups assorted shredded cheese
Salt and pepper to taste

Cut the celery, onions and carrots into even pieces and add them along with the garlic to the bowl of your food processor. Pulse, chopping the mixture into bit size pieces.

In a large pot, cook the bacon, onions, celery, carrots until the bacon is cooked through. If needed drain off some of the bacon grease so there is about 3 tbsp left.

Sprinkle the bacon and onion mixture with the flour and stir together. Add the chopped up baked potatoes, canned milk and milk stirring everything together to combine.

Bring to a boil, reduce the heat and simmer for 5 minutes. Salt and pepper to taste.

Serve with freshly baked rolls (I used Rhodes Dinner Rolls) and enjoy!
