Bacon and Tomato Sandwich with Air-Fries
A favorite sandwich of mine anytime of the year but especially in the Fall with garden tomatoes. Here is my version of this classic dish that my grandma used to make for us all!
Ingredients
1 pound bacon, cooked
4 large tomatoes, sliced
1 small red onion sliced
Bread of choice
Mayonnaise
4 russet potatoes, french fry cut
2 tbsp olive oil
1 tsp garlic salt
1 tsp onion salt

Preheat your oven to 350 degree’s.

Spray a baking dish with vegetable spray and lay the bacon in a single layer on the baking sheet. Transfer the baking sheet to the oven and bake for about 15-20 minutes or until the bacon is crispy.

While the bacon is wash and square off a large baking russet potato. Slice the potato length wise in about 1/4 in thickness. Lay the slice flat on your cutting board and slice it again about a 1/4 inch thick (julienne cut) creating your french fry.

Once the fries are cut, rinse and pat dry the fries. Drizzle them with about 2 tbsps of olive oil and sprinkle the salts over them. Toss them to evenly coat with the oil and salt.

Place the fries into the basket of your air fryer and follow and set the temperature to 400 degrees and cook time for about 15 minutes. Every 5 minutes you will need to shake the basket of fries to make sure it is evenly cooking.

To assemble the sandwiches, toast 8 pieces of toast and once toasted dip on side in the bacon grease.

Spread some mayonnaise over the bread and top it off with bacon, sliced tomatoes and onions (optional). Serve with the air fries and enjoy!
