
Bacon and Corn Chowder
Not a fan of clams? Try this delicious chowder version with bacon and corn. It’s the perfect idea for a fall dinner with family and friends.

Ingredients
1/2 pound bacon, cut up
1 medium onion, chopped
2 stalks celery, chopped
3 medium size potatoes, peeled and diced
1/3 cup flour
4 cups milk
4 cups chicken stock
3 cups fresh or frozen corn
Chopped fresh parsley
Paprika
Salt and freshly cracked pepper to taste
Instructions

Cook bacon in a large stock pot.

Sauté the onion, diced potatoes, corn, and celery in the bacon fat for about 2 minutes.

Sprinkle the mixture with the flour and stir to incorporate the fat and flour together.

Pour in chicken stock and bring to a simmer. Simmer until vegetables are tender.

Once vegetables are tender, pour in milk.

Bring to a boil and allow the chowder to thicken. Continue cooking the chowder a few minutes more.

Sprinkle each serving with parsley and paprika, serve and enjoy!
