B.O.A.T. Sandwich
Bacon, olive tapenade, arugula and tomatoes make up this delicious sandwich. The olive tapenade really takes this sandwich from ordinary to extraordinary.
Ingredients
12 bacon strips, fully cooked
1 can (6 oz) black olives
1 tsp minced garlic
3 anchovies
10-12 capers
2-3 tbsp olive oil
1/3 cup mayonnaise
2 tbsp black olive tapenade
1 tsp red wine vinegar
2 cup arugula
3 tomatoes, sliced
Artisan bread
Pepper to taste
Instructions

Make sure the bacon is cooked to your liking.

In the bowl of your food processor with the blade attachment add the black olives, minced garlic, anchovies, capers and olive oil. Blend everything together. Do not add salt because it will be really salty.

Mix 2 tbsp of the olive tapenade, red wine vinegar with the mayonnaise and set aside.

Divide the remaining ingredients between the four sandwiches. Serve with your favorite side dishes and enjoy!
