Avocado and Shrimp Salad
This tangy salad is elegant enough to serve at any dinner or simple enough to pack up for work. This recipe is courtesy of the American Heart Association.
Ingredients
2 tbsp fat-free, plain Greek yogurt
2 tsp canola oil
1 lime, juiced
1/8 tsp salt
1/4 tsp black pepper
1 small apple, cored and finely diced
1 1/2 cups finely diced celery
1/2 cup chopped cilantro or parsley
1/4 chopped green onion or chives
1 pound shrimp, peeled and chopped
1 avocado, pitted, peeled and diced
4 cups chopped lettuce

To a large bowl, add the yogurt, canola oil, lime juice, salt and pepper, mix everything together to combine.

Add the finely diced apple, celery, cilantro/parsley, green onions/chives, chopped shrimp and diced avocado. Gently fold everything together to combine.

Divide the chopped lettuce between four plates as well as the salad. Serve and enjoy!
