Autumn Harvest Salmon Salad with Maple-Balsamic Vinaigrette and Rhodes Maple-Butter Croutons

This vibrant Autumn Harvest Salmon Salad celebrates everything we love about cozy fall flavors — roasted sweet potatoes, crisp kale, tart cranberries, and crunchy walnuts — all tied together with a luscious maple-balsamic vinaigrette. The star of the show? Flaky, heart-healthy salmon packed with omega-3s and topped with golden Rhodes maple-butter croutons that add just the right touch of sweetness and crunch. It’s a simple, satisfying meal that looks as beautiful as it tastes!

Ingredients

For the Salad: 2 cups sweet potatoes, peeled and cubed
1 tbsp olive oil
Salt and pepper, to taste
4 cups chopped kale, stems removed
2 cooked salmon fillets (about 4–6 oz each)
¼ cup dried cranberries
¼ cup chopped walnuts
¼ cup crumbled feta cheese (optional)
For the Rhodes Maple-Butter Croutons: 3 Rhodes Bake-N-Serve Dinner Rolls, thawed, baked and cubed
1 tbsp melted butter
1 tbsp pure maple syrup
Pinch of salt
For the Maple-Balsamic Vinaigrette: 3 tbsp olive oil
1½ tbsp balsamic vinegar
1 tbsp pure maple syrup
1 tsp Dijon mustard
Salt and pepper, to taste

Instructions

Roast the Sweet Potatoes: Preheat oven to **400°F**. Toss cubed sweet potatoes with olive oil, salt, and pepper. Roast 20–25 minutes, until tender and lightly caramelized.

Make the Maple-Butter Croutons: Toss the baked Rhodes dinner rolls that have been cubed in melted butter, maple syrup, and a pinch of salt. Spread on a baking sheet and bake at 375°F for 10–12 minutes, stirring once, until golden and crisp.

Prepare the Vinaigrette: In a small bowl, whisk together olive oil, balsamic vinegar, maple syrup, Dijon mustard, salt, and pepper.

Assemble the Salad: Massage kale lightly with a drizzle of vinaigrette to soften it. Add roasted sweet potatoes, cranberries, walnuts, and feta.

Add the Salmon & Croutons: Top the salad with flaked salmon and warm Rhodes maple-butter croutons. Drizzle with extra vinaigrette and serve immediately.
