Ground chicken, turmeric, and vibrant veggies come together in this anti-inflammatory twist on the classic Sloppy Joe.

Anti-Inflammatory Sloppy Joes (with Ground Chicken)

Transform a classic comfort food into a nutritious and anti-inflammatory meal! These ground chicken Sloppy Joes are packed with flavor and loaded with ingredients that help fight inflammation. Perfect for a quick, healthy, and delicious weeknight dinner.  

Ingredients

1 lb ground chicken
1 tbsp olive oil
1 small onion, finely chopped
1 small red bell pepper, diced
2 cloves garlic, minced
1 tsp turmeric powder
1 tsp smoked paprika
½ tsp ground cumin
½ tsp black pepper
1 cup unsweetened tomato sauce
1 tbsp apple cider vinegar
1 tbsp honey
1 tbsp Dijon mustard
½ tsp ground ginger
4 whole-grain sandwich buns
Optional: sliced avocado, fresh spinach leaves

Instructions

Heat olive oil in a skillet over medium heat. Add the onion and bell pepper and sauté for 3–4 minutes until softened.

Stir in the garlic, turmeric, smoked paprika, cumin, and black pepper, cooking for an additional minute until fragrant.

Add the ground chicken, breaking it up with a wooden spoon. Cook until browned and fully cooked through, about 5–7 minutes.

Stir in the tomato sauce, apple cider vinegar, honey or maple syrup, Dijon mustard, and ground ginger. Reduce heat and simmer for 5 minutes, allowing the flavors to meld. I'll put 7-8 tomatoes in my blender and puree, simmer for 10 minutes for wonderful tomato sauce.

Toast the sandwich buns lightly if desired. Spoon the chicken mixture onto the buns and top with optional avocado slices and spinach leaves.
