Angel Hair Pasta with Salmon and Shrimp
Here’s a little “surf and surf” for your dinner table. Lightly, refreshing and quick to make this recipe is a winner for any dinner.
Ingredients
1 package angel hair pasta
4 salmon fillets, 6 oz each
1 pound shrimp
2 tsp minced garlic
1 tbsp Italian seasoning
1/4 cup freshly chopped green onion
1/4 cup freshly chopped parsley
2 tbsp tomato paste
1 cup water
Extra virgin olive oil
Shredded parmesan cheese
Lemons
Salt and Pepper to taste
Instructions

Cook the angel hair pasta according to the package directions, drain, rinse and set aside.

Heat a large saute pan on the stove and add enough olive oil to lightly coat the bottom of the pan.

Salt and pepper the salmon fillets and place them skin side up first and pan sear for about 2 minutes. Turn the salmon over (skin side down) and continue cooking for about 2-3 minutes or until cooked. Remove from pan and set aside.

In the same pan add a little more olive oil, garlic, Italian seasoning, green onion, and chopped parsley saute until fragrant.

Add the shrimp (peeled) and cook completely (about 5 minutes).

Add the tomato paste and water, gently stir until combined and bring to a bowl. Salt and pepper to taste.

Add the pasta to the shrimp mixture and gently fold to combine. Divide the pasta, shrimp and sauce between four plates. Top each plate with the salmon fillets and freshly grated parmesan cheese and a squeeze of fresh lemon. Serve and Enjoy!
