Alphabet Beef and Vegetable Soup
This wonderful beef and vegetable stew is perfect for dinner. I love adding a cup of alphabet pasta to it as a reminder of the beef soup mom would make when I was child. Remember delicious food can also be fun!
Ingredients
2 cups chopped up beef steak
1 medium onion chopped
1 bell pepper, chopped
1 sweet pepper, chopped
4 cups mixed vegetables, chopped
6-8 cups beef stock
1 can tomato paste ( 6 oz can )
1 cup alphabet pasta
Salt and pepper to taste
Olive oil
Instructions

Heat a large pot on the stove and add enough olive oil to lightly coat the bottom of the pot.

Add the chopped steak, onion, bell pepper and sweet pepper sautéing everything together. until fragrant. I like to cook the beef all the way through at this point.

Add the mixed vegetables and sauté everything together.

Pour in the beef stock and add the tomato paste. Bring to a simmer and cook for 30 minutes.

Add the alphabet pasta and cook an additional 8-9 minutes to cook the pasta.

Serve the soup with freshly baked rolls and enjoy!
