Air Fryer Stuffed Meatballs with Cache Valley® Creamery Mozzarella Cheese Sub Sandwich

Ingredients

1 lb ground beef (80/20 blend)
1 lb ground pork
1/2 cup breadcrumbs
1/4 cup shredded Cache Valley® Creamery Parmesan cheese
1/4 cup fresh parsley, chopped
2 cloves garlic, minced
1 large egg
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
1 cup Cache Valley® Creamery Mozzarella cheese, cut into small cubes
For the Meatball Subs: 4-6 hoagie rolls
2 cups marinara sauce, warmed
1/2 cup Cache Valley® Creamery Mozzarella cheese, shredded (for topping)
Fresh basil leaves (optional for garnish)

Instructions

Prepare the Meatball Mixture: In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, garlic, egg, Italian seasoning, salt, and pepper. Mix until well combined, but be careful not to over-mix to ensure tender meatballs.

Stuff the Meatballs: Take about 2 tablespoons of the meat mixture and flatten it into a disc. Place a cube of Cache Valley® Mozzarella cheese in the center. Wrap the meat around the cheese, fully enclosing it, and roll it into a ball. Repeat until all the meatballs are formed.

Air Fry the Meatballs: Preheat your air fryer to 375°F (190°C). Lightly spray the basket with cooking spray. Place the meatballs in the basket in a single layer, ensuring they don’t touch. Air fry for 10-12 minutes, turning halfway through, until golden brown and cooked through.

Assemble the Meatball Subs: While the meatballs are cooking, warm the hoagie rolls in the oven or toaster. Spread marinara sauce on each roll. Place 3-4 meatballs on each hoagie, top with more marinara sauce, and sprinkle with shredded Cache Valley® Mozzarella cheese.

Broil (Optional): If desired, place the subs under the broiler for 2-3 minutes until the cheese is melted and the bread is slightly toasted. Garnish with fresh basil leaves.
