Ingredients

For the Black Bean Burgers: 2 (15-ounce) cans black beans, rinsed and drained
1 red bell pepper, roasted and roughly chopped (you can roast it under the broiler until the skin is charred, then peel and seed it)
1 small red onion, finely chopped
2 cloves garlic, minced
½ cup rolled oats (not instant)
¼ cup chopped fresh cilantro
1 tablespoon chili powder
1 teaspoon cumin
½ teaspoon smoked paprika
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons olive oil, plus more for cooking
4 whole wheat burger buns
For the Avocado Crema: 1 ripe avocado
¼ cup sour cream or Greek yogurt
1 tablespoon lime juice
1 small clove garlic, minced
Pinch of salt
For the Sweet Potato Fries: 2 medium sweet potatoes, peeled and cut into fries
1 tablespoon olive oil
½ teaspoon salt
¼ teaspoon paprika

Instructions

Make the Sweet Potato Fries: Preheat your oven to 400°F (200°C).

In a bowl, toss the sweet potato fries with 1 tablespoon of olive oil, salt, and paprika.

Spread the fries in a single layer on a baking sheet and bake for 20-25 minutes, flipping halfway through, until golden brown and tender.

Prepare the Black Bean Burger Patties: In a large bowl, mash the black beans with a fork until mostly smooth but still slightly chunky.

Add the chopped roasted red pepper, finely chopped red onion, minced garlic, rolled oats, chopped cilantro, chili powder, cumin, smoked paprika, salt, and pepper to the mashed black beans.
